Ingredients

  • 1 Small onion (chopped)
  • 1 Clove garlic (minced)
  • 1/4 Cup vegetable oil (divided into 2-parts)
  • 1 Can tomato paste (6-ounce can)
  • 1 Cup water
  • 1 Cup vinegar
  • 2 Tablespoons granulated sugar
  • 1 Tablespoon Worcestershire sauce
  • 1 Teaspoon salt
  • 1 Teaspoon dry mustard powder
  • 1/8 Teaspoon pepper
  • 1/8 Teaspoon chili powder
  • 4 Whole cloves
  • 3 Drops hot sauce (your choice)
  • 1-2 Bay leaves
  • 5 Pounds country-style pork ribs (cut into 6 equal serving sizes)
  • 1 Tablespoon salt

Instructions

  • Taking a large saucepan with low heat, add the vegetable oil until it heats up. Now add the chopped onion and minced garlic until it becomes tender. This is when you add the remainder of all of the BBQ sauce ingredients. This can now be brought to a boil and be sure to stir this well as it comes to a boil.
  • After a boil is reached, this mixture can now be set to simmer for 1-hour. When the BBQ sauce is thickened, remove the bay leaves and set this sauce off to the side.
  • Your ribs and salt are placed into a large Dutch oven with water. The water level only needs to cover the top of the ribs, so the rest of the resulting heat will do the hard work for you. The pot needs to be heated until it boils with the cover placed onto the Dutch oven. After this, you can reduce the heat to simmer for an additional 30 minutes.
  • The idea is to make your ribs tender, so you’ll need to check this after half an hour to see if the meat has reached this stage. At this point, you can remove the water from the pot and let the ribs sit until the next step.
  • Your BBQ grill should be ready by this time so you can place your rib pieces onto the grill. Add the BBQ sauce and coat each side in addition to grilling them for 5-minutes on both sides. Repeat this twice with more sauce applied as you like. This is when you can serve the ribs with the remaining BBQ sauce placed in small bowls with the pork ribs.
